Caesar Chicken
Caesar Chicken on the Grill
1 16 oz. bottle reduced fat or fat-free Caesar-style Salad Dressing
6 bone-in or 6 boneless - skinless chicken breasts
In a large ziploc bag or other plastic marinade container, place chicken. Pour dressing
over the chicken. Add 2 T water to the bottle, shake and pour around edges of chicken. If
your family likes spicy food, add more garlic powder, fresh pepper and a squirt of fresh
lemon juice.
Refrigerate 3 to 24 hours. Drain marinade and discard.
Optional: Place chicken in a glass dish (a pie plate works well) and cover loosely.
Microwave on high 4 to 6 minutes to preheat chicken and reduce cooking time.
Grill chicken over medium coals until juices run clear when pierced with a fork. Meanwhile,
steam baby red potatoes in the microwave, and toss a salad or prepare a vegetable side dish.
Yield: 4 to 6 servings, and good leftovers for lunch the next day!
